Ingredients for making Vegetable dosa

Dosa batter — 4 cups, fermented or ready to use
Onion — 1 medium, finely chopped
Tomato - 1 medium, finely chopped
Carrot — 1 medium, grated or finely chopped
Capsicum — 1 medium, finely chopped
Cabbage — 1 cup, finely shredded
Green chilli — 1–2, finely chopped
Coriander leaves — 1/4 cup, finely chopped
Cumin seeds — 1 teaspoon
Turmeric powder - 1/2 tsp.
Salt — 1 teaspoon, or to taste
Oil as required

How to Make Vegetable Dosa

Follow these simple steps for an easy vegetable dosa that cooks evenly and holds the vegetables neatly in every bite.

1. Wash and dry the vegetables. Finely chop the onion, tomato, capsicum, green chilli, and coriander leaves, then grate the carrot and shred the cabbage. Small pieces cook more evenly and make the dosa easier to spread.

2. Mix the vegetables with the batter. Add the prepared vegetables, turmeric powder, cumin seeds, and salt to the dosa batter. Stir gently until everything is evenly combined. If the mixture feels too thick, add water one tablespoon at a time until it reaches a pourable consistency.

3. Place a cast-iron tawa or non-stick pan over medium heat. Sprinkle a few drops of water on the surface; they should sizzle and evaporate quickly. Wipe the pan lightly and brush it with a little oil.

4. Pour a ladleful of batter into the centre of the hot pan. Using the back of the ladle, spread it in gentle circles into a thin, even round. Do not press too hard, or the vegetables may tear the dosa.


5. Cook both sides. Drizzle a little oil around the edges and cook until the underside is golden and the top looks set. Flip carefully and cook the second side for 30–60 seconds, until the vegetables are tender and lightly browned.


5. Serve hot with your favourite chutney, sambar, or podi. Stir the batter between batches so the vegetables stay evenly distributed.
