Ingredients for making Pidi Kozhukattai
1 cup homemade rice flour
1 cup grated jaggery
1 tablespoon moong dal
1 tablespoon grated coconut
¼ teaspoon cardamom powder
1 teaspoon ghee
2 cups water, plus extra as needed
Instructions for making Pidi Kozhukattai
1. Heat a pan over medium heat. Add the rice flour and dry-roast it until it becomes aromatic and lightly golden. Stir continuously so that the flour does not burn. Transfer it to a bowl and set aside.
2. In the same pan, dry-roast the moong dal until it releases a pleasant aroma. Add enough water and cook the dal for approximately 5 minutes, or until it becomes tender but does not turn completely mushy.
3. Prepare the jaggery syrup: Add the grated jaggery and 2 cups of water to another pan. Heat until the jaggery melts completely. Strain the mixture to remove any impurities, then return the jaggery syrup to the pan and bring it to a boil.
4. Next add the roasted rice flour gradually to the boiling jaggery syrup, stirring continuously to prevent lumps. Add the cooked moong dal, grated coconut, cardamom powder, and ghee. Mix well until everything is combined and the mixture thickens.
5. Allow the mixture to cool enough to handle. Grease your hands lightly with ghee, take a small portion of the mixture, and shape it into a small oblong shaped dumpling by gently pressing it with your fingers. The shape does not need to be perfectly round.
6. Arrange the shaped kozhukattai on a greased idli plate or steamer tray for approximately 5 minutes. The kozhukattai is ready when it feels firm and holds its shape.
