Sweet Suyyam (also known as Chettinad Suzhiyam, Suzhiyan, or Sweet Paniyaram) is an authentic, traditional Tamil sweet delicacy that's deeply rooted in the rich culinary heritage of Chettinad cuisine. Ingredients for making Sweet Seeyam
For the inner stuffing
1 cup Chana Dal
3/4 cup Jaggery
1/2 cup grated Coconut
1 tsp. cardamom powder
For the outer part
Idli rice - 1/2 cup
Urad dal - 1/4 cup
Oil as required
A pinch of Salt
Water as required.
Instructions for making Sweet Suzhiyan
1. Soak urad dal and idli rice together for 2 hours. Rinse it well, transfer to mixer jar, add water little by little and grind to a thick smooth batter. Do not add more water, the batter should be thick.
2. Cook channa dal / Kadalai paruppu in a pressure cooker for 4 whistles.
3. Mash the dal and add powdered jaggery, grated coconut, cardamom powder and cook until its thick.
4. Allow it to cool and make medium sized balls out of the dal mixture. This is the stuffing or Poornam for Suyyam.
5. Heat oil in a kadai. Now dip the poornam ball in batter and fry until crispy.
Delicious Sweet Diwali Suyyam is ready to be served.
Variations of Sweet Suyyam
Kerala Style Sukhiyan:
Use moong dal (green gram) instead of chana dal in filling
Grind moong dal and mix with jaggery and coconut
