Samai Set Dosa is a soft, spongy, and incredibly wholesome South Indian breakfast made using little millet (samai). This nutritious dosa is a healthy twist to the classic set dosa, offering the same fluffy texture and mild flavor, but with the added goodness of millet. It is light on the stomach, easy to digest, and perfect for a filling breakfast or dinner.

Ingredients for making Samai Millet Set Dosa
Samai (Little Millet) – 1 cup
Urad dal – ¼ cup
Aval / Poha - 1/2 cup
Fenugreek seeds – ½ tsp
Salt – to taste
Water – as needed
Oil – for cooking
Method for making Samai Millet Set Dosa
1.Wash and soak Little millet, aval, urad dal, and fenugreek seeds together in enough water for 4–5 hours.
2. Drain the soaked ingredients and grind them into a smooth batter, adding water gradually to reach dosa batter consistency.
3. Transfer the batter to a large bowl, add salt, and mix well. Cover and let it ferment overnight or for 8–10 hours in a warm place until it rises slightly.
4. Heat a dosa tawa or non-stick pan.
5. Pour a ladleful of batter in the center and spread it in a circular motion to form a thick dosa.
6. Drizzle a few drops of oil around the edges.
7. Cook until golden brown on one side, then flip.
8. Serve hot with coconut chutney, tomato chutney, or sambar.
