Quick Samba Rava Idli & Vengaya Kara Chutney | No Grind, No Ferment Wheat Rava Idli | Diabetic-Friendly Breakfast

Wheat Rava Idli, also known as Samba Ravai Idli, is a wholesome and nutritious South Indian breakfast dish made from broken wheat (wheat rava), curd, and grated carrots. Unlike traditional idlis that require soaking, grinding, and fermenting, this instant version is quick and easy to prepare, making it perfect for busy mornings or unexpected guests. The use of wheat rava adds a nutty flavor and a hearty texture, while curd provides a soft and fluffy consistency. Carrots not only enhance the visual appeal with their vibrant color but also boost the nutritional value of the dish. Rich in fiber and low in glycemic index, Wheat Rava Idli is an excellent choice for health-conscious individuals and those managing diabetes. Served hot with coconut chutney or sambar, it makes for a light, satisfying, and balanced meal. Samba Rava idli tastes well with Vengaya Kara Chutney.

How to make Wheat Rava idli

1. Chop the ginger, green chilli and curry leaves finely. Grate the carrots.

2. Heat oil in a kadai, add mustard seeds and allow this to splutter then add hing, urad dal, bengal gram dal, curry leaves, cashews, ginger and green chillies. Saute well for 2 minutes.

3.  Next add the chopped onions and saute well. Add the grated carrots and saute well for few minutes.

4. Next add broken wheat rava (samba rava) and roast it nicely for a few minutes. Allow this to cool.

5. Take a big vessel add the cup of curd and beat this without lumps, add salt and water and beat well.

6. Add the roasted contents in the kadai to the curd and mix well, add little water to get a idli batter consistency.

7. Allow this to stand for 20 minutes so that the rava will get  fully absorbed with the curd. Now add the cooking soda and mix well.

8. Grease the idli plates with gingely oil and pour the batter in the plates and steam cook for 10-15 minutes.

Serve this hot wheat Rava idli with coconut chutney or any chutney of your choice.
