Ingredients for making Rajma Masala


Kidney beans (rajma) – 2 cups (soaked overnight)
Water – 6-7 cups
Salt – to taste
Oil  – 2 tbsp
Onions – 2 medium (finely chopped)
Tomatoes – 3 medium (finely chopped or pureed)
Ginger-garlic paste – 1 tbsp
Green chillies – 2 (finely chopped)
Cumin seeds (jeera) – 1 tsp
Coriander powder – 1 tbsp
Turmeric powder – 1/2 tsp
Red chilli powder – 1 tsp
Garam masala powder – 1 tsp
Kasuri methi (dried fenugreek leaves) – 1/2 tsp
Fresh coriander – for garnish

Preparation Method for Rajma Masala

How to prepare Rajma or Kidney beans for cooking?

Soak kidney beans overnight in plenty of water. Drain and rinse the beans. In a pressure cooker, add beans with 6-7 cups of water and salt.  Cook on high heat for 4-5 whistles until beans are completely soft and tender.

Method for making Rajma Masala

1.  Heat oil or ghee in a large pan or kadai. Add cumin seeds and let them crackle.

2. Add chopped onions and sauté until golden brown. Add ginger-garlic paste and green chillies, cook for 1-2 minutes.

3. Add chopped or pureed tomatoes and cook until they become soft and oil separates from the mixture. This may take about 5-7 minutes.

4. Add coriander powder, turmeric powder, and red chilli powder. Mix well.

5. Cook for another 2 minutes to release the flavors.

6. Add the cooked kidney beans to the masala mixture. Stir well and add garam masala powder.

7. Allow this to cook in low flame for 5-10 minutes on low heat, stirring occasionally.

8. Garnish with fresh coriander leaves.

Serve hot Rajma Masala with steamed rice or roti.
