Ingredients for making Coconut Athirasam Recipe
Raw rice – 1 kg
Jaggery – ¾ kg, powdered
Water – ¼ cup
Grated coconut – ½ coconut
Ghee – 1 tablespoon
Groundnut oil – as needed for deep frying

Method for making Coconut Athirasam Recipe
- Wash the raw rice thoroughly two or three times. Soak it in water for 12 hours.
- After soaking, drain the water completely. Grind the rice in a mixer to make a smooth powder.
- Sieve the rice flour to remove any lumps or coarse particles. Set it aside.
- Add the powdered jaggery and ¼ cup of water to a wide pan. Heat until the jaggery dissolves completely.
- Strain the jaggery syrup to remove any impurities. Pour it back into the pan and boil until it reaches the correct consistency.
- To check the syrup, drop a little jaggery syrup into a bowl of water. If you can gather it and roll it into a soft ball with your fingers, the syrup is ready.
- Add the grated coconut and ghee to the jaggery syrup. Mix well.
- Add the sieved rice flour little by little, stirring continuously to prevent lumps from forming.
- Once the mixture comes together into a soft dough, transfer it to a bowl and allow it to cool completely.
- Cover the dough and let it rest for one full day. Resting the dough helps make the Athirasam soft and flavourful.
- The next day, grease your hands with a little oil. Take a small portion of the dough and roll it into a ball.
- Place the dough ball on a greased banana leaf or plate and flatten it into a thick disc. Repeat with the remaining dough.
- Heat groundnut oil in a deep pan over medium heat. Once the oil is hot, carefully add the flattened Athirasam discs.
- Fry them on both sides until they turn golden brown. Remove them from the oil and drain the excess oil.
- Allow the Coconut Athirasam to cool before serving.
Coconut Athirasam is ready!
