Potato podimas or Urulai Kaarakari is a simple and flavourful South Indian potato curry made with aromatic spices, onions, and tender potatoes. With its deliciously crispy edges and spicy, homestyle taste, this easy side dish pairs perfectly with sambar rice, rasam, or curd rice.

Ingredients needed for making Urulai Kaara varuval
Potato - 5 nos.
Onions - 2
Garlic cloves - A handful
Turmeric powder - 1/4 tsp
Chilli powder - 2 tsp.
coriander powder - 3 tsp.
Salt as required.
Oil as required
Mustard seeds -1 tsp
Urad dal -1 tsp
Ginger -1 inch piece finely chopped
A sprig of Curry leaves
Onions - 2

Method for making Potato Fry
1. Peel the skin of potato and chop them into small cubes. Keep this in water to prevent discoloration.2. Add the cut vegetables to water in a wide vessel by adding salt and turmeric powder and cook till they become soft and pliable. Do not overcook them.
3. Drain the water completely and keep it aside.
4. Heat oil in a kadai, add mustard seeds, when it splutters, add urad dal and after it becomes golden brown, add garlic, ginger and curry leaves.
5. Then add the finely chopped onions and saute well.
6. Next add the cooked potatoes and mix well then add the powders and mix well so that the veggies are coated well with masalas.
7. Fry them in a medium flame for about 15 minutes till they become roasted and crispy. You can add oil around if necessary.
