Ingredients for making Semiya Rava Khichdi
1/2 cup vermicelli (semiya)
1/4 cup rava
2 tablespoons ghee or oil
1 teaspoon mustard seeds
1 teaspoon cumin seeds
1 teaspoon urad dal
1 teaspoon chana dal
8-10 curry leaves
2 green chilies, slit
1 medium sized onion, chopped
1 medium sized tomato, chopped
1/4 cup mixed vegetables (carrots, peas, beans - optional)
2.5 cups water
Salt to taste
1/4 teaspoon turmeric powder
A handful of cashews
How to make Semiya Rava Khichdi
1. Dry roast vermicelli in a pan until light golden. Remove and set aside. In the same pan, roast rava until aromatic. Set aside.
2. Heat ghee/oil in a pan. Add mustard seeds, cumin seeds, urad dal, and chana dal. Let them splutter. Add the cashews and fry till light brown.
3. Add curry leaves, green chilies, and onions. Sauté until onions turn translucent. Next add the chopped tomatoes and saute well.
4. Add finely chopped vegetables and sauté for 2-3 minutes.
5. Pour in water, add salt and turmeric. Bring to a boil.
6. Add the roasted vermicelli and rava. Mix well, reduce heat to low, cover and cook for 5-7 minutes until everything is cooked and water is absorbed. Stir occasionally to prevent sticking.
