Samba wheat / Samba Godhumai is an ancient grain with a high fiber content, lower gluten, and a lower glycemic index than modern, common wheat varieties. It is less processed and not polished, retaining more of its natural nutrients, vitamins, and minerals compared to regular wheat flour. Here I have bought Samba wheat from the store and then made home made flour from the mill. Samba Wheat Chapathi is good for diabetic patients and also for people with skin allergy due to its low gluten content.

Ingredients for making Samba Wheat Chapathi
Samba Wheat Flour - 1 cup
Oil as required.
Salt as required.
Water as required.

Method for making Samba Wheat Chapathi
1. Mix the wheat flour with required amount of salt and ghee and knead well to form a soft dough.
2. Roll thin, cook on hot griddle, and finish with oil or ghee for aromatic, golden chapathis.
3. If you want it to be tasty then add little ghee and fold it into triangle shape or into square shape.
4. Cook this in a dosa tawa till you get a golden brown colour with ghee.
Now the yummy Samba Chapthi is ready to be served.
