Varagu Pudina Sadam | Kodo Millet Mint Rice | Healthy Lunchbox Recipe

Varagu Pudina Sadam or Kodo Millet Mint Rice is one of the yummy and tasty rice delicacy which is very healthy and tasty lunchbox recipe. This aids in good digestion and also increases appetite or the sense of hunger. Pudina Sadam is made using fresh pudina or mint leaves, cooked millets and spices. Varagu Pudina Sadam or Kodo Millet Mint Rice



 

Ingredients for making Varagu Pudina Sadam 

Varagu Arisi / Kodo millet  - 2 cups 

To Saute and Grind:

Mint leaves- 1 bumch
Red Chillies - 4 nos
Green chillies- 4
coconut (grated)- 2 tbsp
Garlic - 7 cloves
Salt to taste

For seasoning

Groundnut oil- 2 tbsp.
mustard seeds- 1 tsp
Urad dal - 1 tsp.
channa dal- 1 tsp
red chillies-2
Cashew - 10 nos.
ginger- a small piece chopped finely
curry leaves- a few
asafoetida- little


Method for making Kodo Millet Pudina Sadam 


1. Wash and soak the kodo millet in water for 1 hour. Take care to wash several times to remove the impurities. Add 6 cups of water and cook in a pressure cooker for 2 whistles. When the pressure releases allow the rice to cool.

2. Saute the ingredients given in the list to a thick paste. Set this aside.

3. Heat oil in a pan. Add the mustard seeds after it splutters add the urad dal, chana dal, red chillies, curry leaves and cashews. Next add the ginger and asafoetida and sauté for a minute till they turn transparent.

4. Add the ground masala and mix well. Cook till oil separates. It will take around 10 mins. Now the Mint Rice Paste is done.

5. Add the kodo millet to the above mixture and mix well.

Serve Varagu Pudina Rice with any South Indian Varuval or Vadai.
