Karamani Sundal | Black Eyed Peas Sundal | Lobia Sundal | Diabetic Friendly Recipe

 

Karamani Sundal or Black Eyed Peas Sundal is one of the healthy and tasty evening special recipe good for diabetic people. This is offered to the Goddess as neiveidyam on Navaratri festival. This is prepared as prasadam and given to the guests for Navarathri Golu. This can also be prepared as a healthy evening snack because it is rich in proteins. Good for growing kids and even for diabetic patients if they avoid coconut here in this recipe.




Karamani Sundal

Ingredients for making Karamani Sundal

1 cup white Karamani
1 tsp. turmeric powder
2 red chillies
2 green chillies
1/2 cup Grated Coconut
1 tbsp. grated ginger
1/2 cup Raw mango
A sprig of Curry leaves
A pinch hing
1 tsp Oil
1/2 tsp Mustard Seeds
1/2 tsp Urad dal
Salt as Needed.

Method for making Karamani Sundal

  1. Wash and soak the karamani in water overnight or for 6 to 8 hours.
  2. Pressure cook the karamani with little salt and turmeric powder till it becomes soft. Allow 2 to 3 whistles in cooker.
  3. Heat the oil in a pan, splutter the mustard seeds, add hing, curry leaves, grated ginger, finely chopped green chillies, finely chopped raw mango and red chillies and saute well, then add the grated coconut and saute well.
  4. Next add the cooked Karamani and mix well with the fried contents.
  5. The delicious and yummy Karamani sundal is ready to be served for guests.
