Vegetable Dosa is one of the healthy South Indian Breakfast Recipe made using a mixture of vegetables. Here the dosa batter is mixed with freshly grated and sauted vegetables. This is a healthy breakfast option for Diabetic people because it is rich in fibre.

Ingredients for making Vegetable Dosa
Idli dosa batter - 3 cups
Onions chopped - 1 cup
Capsicum chopped - 1/2
Tomatoes chopped - 1 cup
Grated carrots - 1/2 cup
Chopped Cabbage - 1/2 cup
Chopped beans - 1/2 cup
Green chilli chopped - 2 nos.
Coriander leaves - A handful
Oil as required
Method for making Vegetable Dosa
1. Heat oil in a kadai splutter the mustard seeds and then add urad dal. Add chopped onions and saute till transparent.
2. Add the chopped veggies and saute well till they are crunchy and half cooked. To a mixing bowl add all the chopped vegetables and green chillies. Add little salt and mix well.
3. Now empty the contents of the kadai to the idli dosa batter and mix well.
4. Now take a laddle full of batter and pour on the dosa tawa. Do not spread like dosa just pour and spread to a thick dosa.
5. Pour oil around and close with a lid. Cook for 2 mins in low medium flame.
Now the Mixed vegetable Dosa is ready to be served with Sambar, chutney or idli podi.
Note: You can add veggies as per your preference but always try to choose the vegetables which will cook faster. You can also spread idli podi on the top of the vegetables.
