Ingredients for making Beans carrot Poriyal
Beans - 1 cup (finely chopped)
Carrot - 1 cup (finely chopped)
Onion - 1 (finely chopped)
Red chillies - 2

Mustard seeds - 1tsp.
Split urad dal - 2 tsp.
A pinch of turmeric powder.
A sprig of curry leaves
For Grinding
Moong dal - 1/2 cup.
Red chillies - 2

Garlic - 6 nos.
Method for making Beans Carrot Poriyal
1. Take equal proportions of finely chopped beans and carrot.
2. Soak the moong dal in water for 1 hour and grind them to a coarse texture along with red chillies and garlic. Do not over grind.
3. Boil water in idli pan, spread the coarse mixture on the steamer plate and steam it for 5-7minutes
4. Steam cook the chopped carrot and beans.
5. Heat oil in a kadai add the mustard seeds and allow it to splutter next add the red chillies and split urad dal when the dal turns brown add the curry leaves.
6. Next add the finely chopped onions and saute till they become transparent.
7. Now add the steamed dal and saute well followed by the chopped vegetables and mix well.

8. Add salt and turmeric powder saute well for 2 minutes close it with a lid and cook in a medium flame.
9. It will take just 3 to 5 minutes for it to be cooked.
10. Now the yummy healthy Carrot Beans Usili is ready for lunch.
Variation: You can substitute any vegetables of your choice in the above recipe. Cabbage, Kothavarangai / Cluster beans, Karamani / long beans, Avarakkai / Broad beans, beet root, etc.
Serve this with Sambar, Kaara Kuzhambu or Rasam.
