Chettinad Vara Milagai Chutney is one of the Traditional recipe which is famous in Karaikudi. This is made using very little ingredients and is very spicy and tasty. The speciality of this chutney is that it is best for pregnant women and lactating mothers and is made for them by the grannies. This chutney is made without coconut and so it is a best diet recipe.
Ingredients for making Vara Milagai Chutney
Small onions - 20Red chilli - 5
Garlic - 4
Tamarind - small size
Tomato - 1 small
Salt to taste
Mustard seeds - 1 tsp
Urad dal - 1 tsp
Gingely Oil - 3 tbsp
A sprig of curry leaves
Method for making Vara Milagai Chutney
1. Heat oil in a kadai, splutter the mustard seeds and urad dal, add curry leaves and then add the small onions saute well and then add the red chillies. The bright red color comes only when the sigappu milagai is added after the onions are saute.2. Next add the tomatoes and tamarind and saute well till the tomatoes become mushy.
3. Cool the contents add salt and grind in a mixie.
4. Heat gingely oil, splutter the mustard seeds and then add the ground chutney and let it stand for 5 minutes.
Serve this with idli, Dosa, kuzhipaniyaram or any South Indian Tiffin Varieties by adding little oil to the chutney.
