Kalyana Veetu Avial Recipe | Easy Aviyal Recipe for Adai, Pongal & Rice

Ingredients needed for making Avial / Aviyal

Mixed Vegetables - 2 cups (Carrot, Drumstick, Beans, Potato, Raw plantain,White pumpkin)
Curd - 3 tbsp.
Salt as required
Turmeric powder - 1/2 tsp.

For the Coconut Masala
Grated coconut — 1 cup
Cumin seeds — 1/2 tsp
Green chilli — 3
Cashewnuts - A handful

To Temper
Coconut oil — 2–3 tsp
Curry leaves — a few

How to Make Avial

1.  Wash all the vegetables. Peel the carrots, raw plantain, and potatoes, then cut all the vegetables into 2-inch-long pieces.

2. In a mixer, grind the grated coconut, green chillies, cashews and cumin seeds. Set the ground paste aside.

3. Steam cook the vegetables in a steamer. Add salt and turmeric powder, then cook for 3 to 5 minutes in medium flame. Alternatively, cook the vegetables in a cooker or an open pan to avoid them becoming mushy.


4. Heat coconut oil in a kadai, splutter the cumin seeds add the curry leaves. 

5. Add the cooked vegetables and mix well.

6. Add the ground coconut paste and cook for a few minutes. Remove from the flame.

7. Add the curd and mix well. Temper with coconut oil and fresh curry leaves to enhance the flavour.
