Onion Medu Vadai is a delicious South Indian snack made with a crispy golden exterior and a soft, fluffy centre. Prepared with urad dal, finely chopped onions, green chillies, ginger, curry leaves, and aromatic spices, this savoury vadai is full of flavour. Ingredients for making Medu Vadai
1 cup whole urad dal
1 medium onion, finely chopped
2 green chillies, finely chopped
1-inch piece ginger, finely chopped
2 tablespoons curry leaves, chopped
2 tablespoons coriander leaves, chopped
½ teaspoon black pepper, crushed
½ teaspoon cumin seeds
Salt, to taste
Oil, for deep frying
Water, as needed
Method for making Medu Vadai
1. Wash and soak the urad dal for 3–4 hours.
2. Drain the water completely and grind the dal into a thick, smooth batter. Add very little water while grinding.
3. Transfer the batter to a bowl and whisk it well for a few minutes to make it light and fluffy.
4. Add the chopped onion, green chillies, ginger, curry leaves, coriander leaves, crushed pepper, cumin seeds, and salt. Mix well.
5. Heat oil in a deep pan over medium heat.Wet your hands, take a small portion of batter, make a hole in the centre, and gently slide the vadai into the hot oil.
6. Fry a few vadas at a time until they turn golden brown and crisp on both sides.
7. Drain them on a paper towel and serve hot.
Serving Suggestions
Serve onion medu vadai with coconut chutney, sambar, or tomato chutney. It also pairs well with hot tea or coffee.
Tips for Crispy Vadai
- Drain the soaked dal thoroughly before grinding.
- Keep the batter thick; a watery batter will absorb oil.
- Whisking the batter helps make the vadai soft inside.
