Ingredients for making Arisi Paruppu Sadam
Raw rice – 1 cup
Toor dal – ½ cup
Small onions – 10 to 12 (sliced)
Garlic – 6 to 8 cloves
Tomato – 1 (chopped)
Tamarind – small lemon-sized ball
Turmeric powder – ¼ tsp
Salt – as required
Water – 4 cups
Ghee – 2 tbsp
Oil – 1 tbsp
To Roast and Grind
Dry red chilies – 4 to 5
Black pepper – ½ tsp
Cumin seeds – 1 tsp
Coriander seeds – 1 tbsp
Grated coconut – 2 tbsp
For Tempering
Mustard seeds – ½ tsp
Cumin seeds – ½ tsp
Curry leaves – few
Asafoetida – a pinch
Method for making Arisi Paruppu Sadam
1. Wash rice and dal together and keep aside.
2. In a pan, dry roast red chilies, pepper, cumin, and coriander seeds until fragrant. Add grated coconut and roast for a few seconds.
3. Cool and grind this to a coarse paste in a mixie.
4. Heat ghee and oil in a pressure cooker. Add mustard seeds, cumin seeds, curry leaves, and asafoetida.
5. Add sliced onions and garlic; saute until golden brown.
6. Add chopped tomato and cook until soft.
7. Add the ground masala paste, turmeric powder, and salt. Saute for a minute.
8. Add soaked tamarind extract, rice, and dal. Pour in 4 cups of water and mix well.
9. Close the lid and pressure cook for 3 whistles on medium flame.
10. Once pressure releases, open and mix gently.
