Coconut burfi is a delicious and easy-to-make Indian sweet prepared with freshly grated coconut, sugar, milk, ghee, and cardamom. Ingredients for making Coconut Burfi / Thengai Burfi
- 2 cups freshly grated coconut
- 1½ cups sugar
- ½ cup milk
- 2 tablespoons ghee
- ½ teaspoon cardamom powder
- 2 tablespoons chopped cashews or almonds
- A few saffron strands, optional
Method for making Coconut Burfi / Thengai Burfi
1. Grate the coconut always grate only the white portion and avoid the brown skin for a smooth burfi.Grease a tray or plate with a little ghee and keep it ready.
2. Heat 1 tablespoon of ghee in a heavy-bottomed pan.
3. Add the grated coconut and sauté on low heat for 2–3 minutes. Do not brown the coconut.
4. Add the milk and mix well. Cook for a few minutes until the coconut absorbs the milk.
5. Add the sugar and stir continuously. The mixture will first become slightly watery as the sugar melts.
6. Continue cooking on medium-low heat until the mixture thickens and starts leaving the sides of the pan.
7. Add the remaining ghee, cardamom powder, and chopped nuts. Mix well.
8. When the mixture reaches a soft, slightly sticky consistency, switch off the flame. Do not overcook, as the burfi may turn hard.
9. Transfer the mixture to the greased tray and spread it evenly using a greased spatula.

10. Allow it to cool for 30–45 minutes. Once set, cut into squares, rectangle or diamond shapes.
