Ingredients needed for making Paruppu Poli

For the Dough
  • Maida (all-purpose flour) – 1 cup
  • A pinch of salt
  • Turmeric powder – 1/4 tsp
  • Gingelly oil – 2 tbsp
  • Water – as needed
For the Filling (Puran)
  • Chana dal (Bengal gram dal) – 1/2 cup
  • Jaggery – 3/4 cup
  • Cardamom powder – 1/2 tsp
  • Ghee – 1 tsp
For Cooking
Ghee or oil as needed


Preparation Method for making Paruppu Poli

1. Dough preparation: In a bowl, mix maida, salt, and turmeric powder. Add water gradually and knead into a soft, smooth dough. Add gingelly oil, coat the dough, and rest it for at least 2 hours.

2. Prepare the Filling: Cook chana dal in enough water until soft but not mushy. Drain excess water.
Grind the cooked dal into a coarse paste. In a pan, melt jaggery with a little water and filter to remove impurities. Add the ground dal to the jaggery syrup and cook until the mixture thickens and leaves the sides of the pan. Add cardamom powder and ghee, mix well, and let it cool. Divide the filling into small lemon-sized balls.

3. Make the Poli
  • Divide the dough into equal portions and flatten each ball slightly.
  • Place a puran ball in the center, cover it with the dough, and flatten gently.
  • Roll out carefully into a thin disc using a banana leaf or plastic sheet greased with oil.
  • Heat a tawa and cook the poli on both sides with ghee until golden brown.
Serve Paruppu Poli warm with a drizzle of ghee or a splash of warm milk.
