Panivaragu Khichdi | Proso Millet Upma | Diabetic Friendly Breakfast Recipe

Panivaragu Khichdi | Proso Millet Upma

Ingredients for making Proso Millet Khichdi

Proso Millet / Panivaragu - 1/2 cup
Water - 1.5 cups
Onion - 2 nos.
Tomato - 1 no.
Mixed veggies - 1 cup  (Beans, Carrot, Peas, etc. )
Green Chillies , Chopped
Few Coriander leaves, Chopped
Salt, to taste
  
 To Temper
 Mustard seeds - 1 tsp.
 Split  Urad dal - 1 tsp.
 Bengal Gram/ Chana Dal - 1 tsp.
 A pinch Turmeric powder       


Method for making Panivaragu khichdi / Millet Upma


1. Wash and rinse Proso millet / Panivaragu in water and soak in water  for 1 hour. 

2. Heat oil in a kadai add mustard seeds when it splutters add chana dal, urad dal and fry till they turn golden brown.

3. Next add curry leaves, chopped onions, ginger and  slit green chillies. Saute for a minute or two till the onion turns transparent. 

4. Next add finely chopped mixed veggies of your choice. Saute well and then add chopped tomatoes. Saute well and then add required salt, turmeric powder and hing and saute for 3-4 mins.

5. To that add 1.5 cups of water. When the water starts boiling add the soaked and drained millets. Stir well and close it with a lid.

6. Cook this in a medium flame with stirring at regular intervals. 

7. It may take about 12 to 15 minutes for the panivaragu to be cooked. 

8. Once the millets are cooked add coriander leaves and serve hot .
