Millet Idiyappam | Barnyard Millet Idiyappam | Kuthiraivali Idiyappam Recipe | Diabetic Diet Recipe

Millet Idiyappam / Kuthiraivali Idiyappam is one of the most healthy breakfast recipe. I have experimented different dishes with millets and I just tried doing Idiyappam with Barnyard millet. You can also use kodo millet, little millet or foxtail millet for making these tiny string hoppers. The method is the same for all type of millets. Tastes divine with Vegetable Kurma, Vadacurry or simple coconut chutney.

Ingredients for making Soft Idiyappam

Kuthiravalli flour / Barnyard Millet flour - 2 cups

Boiling water as needed.

Salt as required.

Grated coconut- 1 cup

Method for making Soft Idiyappam

1. Dry roast the Barnyard millet, cool and grind it to a fine powder. You can also use readymade Millet flour available in the stores.

2. Boil water with salt in a heavy bottomed vessel, add this to the millet flour little by little and mix well with the stem of a wooden ladle. Mix well to make a soft dough you can add little oil to ensure that the dough does not stick. The amount of water you add varies according to the millet flour quality.

2. Now grease the idiyappam maker, pinch a ball from the dough  and add to the idiyappam maker, press the mold on the idli or idiyappam plates to form circular mounds.

3. Pour water to the idli steamer as required and place the plates. Now close and steam this for about 10 minutes till the idiyappam is cooked.

Now the yummy Millet Idiyappam is ready to be served. You can sprinkle coconut and sugar and mix well or you can serve with stew or kurma.
