Get to know the preparation of light, soft, crispy hotel style Dosa recipe. Read the recipe and use the correct measurements of dal and rice. Try to use good quality rice and dal for getting crispy tasty dosas. Always try to ferment till the batter rises on the top. Do not over ferment the batter. Ingredients needed for making Hotel Crispy Dosa

Urad dal - 1 /2 cup
Idli rice - 2 cups
Thick poha / Aval - 1/4 cup
Chana dal - 1 tbsp.
Rava - 3 tbsp.
Fenugreek seeds - 1 tsp.
Salt as required.

Method for making Hotel Style Crispy Dosa

1. Wash all the ingredients with water thrice to remove the impurities. 

2. Then soak the rice and poha together in water in a wide container.

3. Soak the urad dal, chana dal and fenugreek together in a different container.

4. Soak for 4 to 5 hours.

5. After 4 hours grind the urad dal to a fluffy batter. It may take around 30 minutes. Remove this in a big vessel.

6. Next add the soaked rice and poha and grind this to fine batter. Take care not to grind very fine it must be little coarser.

7. Add enough salt and rava and mix both the batters well and allow this to ferment for 4 to 8 hours. Fermentation depends on the climatic conditions of the place where you live.

8. Now the batter is ready to make dosas. You can refrigerate and use this for 4 days.

9. Now take the required amount of batter in a container and add 1 tsp. of sugar so that the sugar will caramalise and gives a brown colour to the dosa.

10. Pour a ladle full of batter to a heated dosa tawa it should be thick in the middle and thin around the sides.

11. Mix ghee and groundnut oil in a small bowl and add this around the dosa. Close this with a lid.

12. Now serve the hot crispy dosa with your favorite chutney. You can also serve with potato masala or chana masala
