Pudina Vegetable Pulao | Mint Coriander leaves Pulao | Pudina Rice Recipe

Pudina Vegetable Pulao is a traditional Pulao recipe made with a combination of Coriander leaves and Pudina leaves.  The aroma and taste of pudina blended with a mix of chopped vegetables will be a good treat to your taste buds. Try this recipe and enjoy with your family.

Ingredients for making Pudina Vegetable Pulao 

Basmati rice – 1 cup
Potato – 2
Carrots - 2
Beans - 10nos.
Cashewnuts – as required
Green peas – 1 cup
Onion – 1
Tomato - 1
Turmeric powder – 1 tsp
Oil as required
Ghee – 3 tbsp
Brinji leaves as required
2 – 3 cloves
A piece of cinnamon
Salt to taste

To grind:

Pudina – A handful
Coriander leaves / Kothamalli – A handful
Chopped onions - A handful
Green chillies – 2
Grated coconut – ½ cup
Ginger-garlic paste – 2 tsp
Cloves - 5 
Cinamon - 1/2 inch
Cardamom - 2

Preparation of Pudina Vegetable Pulao 


1. Wash and then soak the basmati rice in water for half an hour.

2. Chop the onions into lengthwise, tomato and potato into cubes. Chop the carrots, capsicum and beans into small pieces.





3. Grind the ingredients given under "To grind" in a mixer by adding little amount of water to a smooth paste.

4. Heat ghee in a pressure pan add cloves, brinji leaves, cashews and cinnamon, add the chopped onions, tomato and saute till transparent.

5. Next add the chopped vegetables and green peas and saute well till it turns aromatic. everything gets mixed.


6. Now add the ground paste, turmeric powder with the required amount of salt and saute well.

7. Add some ghee and then add the soaked basmati rice saute well till it gets mixed .

8. Add 2 cups of water, close the lid and cook in a medium flame for 2 whistles.

9. Then open the lid mix the biryani with a wooden ladle to avoid breaking of rice.

Now the Pudina Vegetable Biryani is ready to be served with Black Chana sundal and Cucumber curd raitha.
