Kuthiraivali Dosa and Idli | Barnyard Millets Idli Dosa Recipe

Kuthiraivali Dosa or Barnyard Millets Dosa is one of the healthy nutritious breakfast recipe which is good especially for diabetic and hypertensive patients. It is rich in fiber and is also good for people of all ages. Millets dosa tastes just like the ordinary dosa but it will give you a feeling of fullness and also stops craving for food. Here the same batter can be used to make both idlis and dosas. Tastes well with Kadalai curry and curry leaves onion chutney.

Ingredients for making Barnyard Millets Dosa         

2 Cups Barnyard Millet/Kuthiraivali
3/4 cup urad dal
4 tbsps. of Javvarisi / Sabudana
1/2 tablespoon Fenugreek seeds
Salt to taste
Oil for making dosas.

Method for making Barnyard Millets dosa    

1. Wash the millets with water 3 times to get rid of impurities and Soak the millets, sabudana, urad dal separately for for 3 hours in water. you can add fenugreek seeds along with urad dal.

2. Drain water and grind Barnyard millet to a smooth batter by adding very little water. Do not add more water as it may become runny.

3. Grind sabudana, urad dal and fenugreek seeds together to a fine paste. 

4. Now mix both the contents together. Add required amount of salt and allow this to stand for 6-8 hours or keep for overnight fermentation.

5. After fermentation store the batter in a refrigerator.

6. Heat the dosa tawa and take a ladleful of batter and spread as dosa and flip it. Add oil around the dosa.

Kuthiraivali Dosai is ready.
