Mangalore Bonda (also known as Goli Baje, Mangalore Bajji, or Mangaluru Bonda) is a beloved crispy, fluffy, and utterly addictive snack from the coastal region of Karnataka that has won hearts across South India! These golden, cloud-like fritters are incredibly easy to make with simple pantry ingredients, yet they deliver restaurant-quality taste and texture that will have everyone asking for more. What makes Mangalore bonda truly special is its unique texture – crispy and golden on the outside, while soft, airy, and almost hollow on the inside. Unlike regular bondas that have a filling, these are made from a spiced, fermented batter that puffs up beautifully when fried, creating delightful pockets of air. The combination of tangy curd, aromatic spices, and fresh curry leaves creates a flavor profile that's both comforting and exciting!
