Thalippu Vengaya Vadagam - Onion Vadagam Seasoning and Tempering Agent

Vengaya Vadagam is one of the instant seasonings made using onions, garlic and spices. They are mixed together and dried in sun and stored for a year. This thalippu vadagam can be used as a seasoning for any vegetable curries, kara kuzhambu, Pulikeerai, etc. Onion Vadagam enhances the flavor of the dish and gives a nice aroma and taste to the dish.

Ingredients for making Thalippu Vengaya Vadagam

Big Onions – 2 kg.
Garlic small variety – 1/4 kg.
Mustard – 2 tbsp.
Fenugreek seeds – 1/2 cup (approx. 100 gm.)
Cumin seeds – 1/2 cup.
Turmeric powder – 1 tsp.
Urad dal – 1/2 cup
Curry leaves – few strings
Table salt – 3 tsp.
Sesame oil – 100 ml

Method for making Thalippu Vengaya Vadagam

1. Wash and Soak the urad dal in water for 20 minutes and then drain the water. To this add the mustard, fenugreek, turmeric powder, cumin seeds and mix well with your hands.

2. Chop the onions, curry leaves and garlic into fine tiny pieces.

3. Take a large bowl and add the finely chopped onions, garlic and curry leaves followed by the soaked contents with enough salt and mix well. Keep the container tightly covered for a day.

4. Dry this in direct sunlight on the next day. Let this dry for the whole day till sunset.

5. On the next day, that is Day 3 add the sesame oil and mix well and then roll them into apple medium sized balls and continue drying it in sunlight for one more day.

Now the Vengaya Vadagam is ready.
