Sweet Aval Kozhukattai

Ingredients needed for making Aval Kozhukattai

1 cup thick aval/poha
¾ cup grated jaggery
½ cup fresh grated coconut
¼ teaspoon cardamom powder
1 tablespoon rice flour, optional
1–2 teaspoons ghee
A pinch of salt
2–4 tablespoons water, as needed

Method for making Aval Kozhukattai

1.  Take thick aval in a mixie, lightly pulse it in until coarse powder.

2. Heat the powdered jaggery with 2 tablespoons of water until it dissolves. Strain it to remove impurities, then return it to the pan.

3. Add the grated coconut, cardamom powder, salt, and ghee to the jaggery syrup. Bring it to a gentle boil.

4. Stir in the powdered aval and mix well. Cook until the mixture becomes thick and leaves the sides of the pan. Add rice flour if the mixture feels too soft.

5. Let it cool until comfortable to handle. Grease your hands lightly with ghee and shape the mixture into small balls or oval kozhukattai.

6. Place them in a greased steamer plate and steam for 8–10 minutes. Allow them to cool slightly before serving.

7. Now add freshly grated coconut on top of the Aval Kozhukattai and serve.

Tips for making Perfect Kozhukattai
  1. Use thick aval for better texture; thin aval can become mushy.
  2. Do not add too much water while making the jaggery syrup.
  3. If the mixture is sticky, cook it for another minute or add a little rice flour.
  4. For extra flavor, add roasted sesame seeds, chopped cashews, or a pinch of dry ginger powder.
