Carrot Peanut Rice | Carrot Verkadalai Sadam | Lunchbox Recipe

Carrot Peanut Rice is one of the healthy and easy to make lunchbox recipe which can be prepared in minutes in the early morning and packed for lunch to the kids. Here freshly ground peanuts and grated carrots are mixed with spices to give a nice flavor. Carrots are rich in minerals and vitamins and including carrots in or day to day menu boosts our immunity.

Carrot Peanut Rice

Ingredients for making Carrot rice

Grated carrots - 1 cup
A handful of roasted peanuts
Raw rice - 1 cup
Sambar powder - 2 tsp.
Chopped onions - 1 cup
Chopped green chilly - 1
A pinch of Turmeric powder
1/2 cup chopped Coriander leaves
Oil and ghee  as required
mustard seeds - 1 tsp.

To grind
Roasted peanuts - 1 tbsp.
Red chilli - 1 no.

Method for making Carrot rice

1. Wash and soak the raw rice for 15 minutes, drain the water and cook the rice using 1 and 1/2 cup of water with  little salt and 1 tsp of oil. Cook this in a low flame for 10 minutes and take care it is not over cooked.

2. Heat oil in a pan, splutter the mustard seeds, urad dal and peanuts and then the chopped onions, green chilly and saute them till they become transparent.

3. Next add the grated carrots, sambar powder, turmeric powder and salt saute well in a medium flame for 5 minutes


4. To this add the cooked  rice and mix gently. Add the freshly ground peanut mixture and mix well.

Garnish with coriander leaves.
