Thinai Masala Vadai is a healthy version of the regular paruppu vadai. All the methods and ingredients are the same as of masala vadai but the only different thing is we add half a cup of thinai or any millets of your choice to make it fibre rich and healthier.

Ingredients for making Thinai Masala Vadai
Thinai arisi / foxtail millet - ½ cupChanna dal / kadala paruppu - ½ cup
Onion - 2 nos. finely chopped
Green chilies - finely chopped
A sprig of curry leaves
1 tbsp chopped mint leaves
1 tbsp chopped coriander leaves
1 tbsp saunf / fennel seeds
salt to taste
1 tbsp grated ginger
Asofoetida / hing - a pinch
Instructions for making Thinai Masala Vadai
1. Soak thinai arisi in enough water for 3 hours and channa dal in water for 1 hour.
2. Drain the water completely and grind it to along with ginger, green chillies and fennel seeds to coarse paste.
3. Transfer this to a mixing bowl and then add chopped onions, coriander leaves, mint leaves, curry leaves, salt and asofoetida.
4. Mix well and allow it to stand for 5 minutes.
5. Heat oil in a pan make small balls from the batter. Flatten them using your palms and drop in oil. Fry this till you get a golden brown colour on both the sides.
Serve this hot spicy Thinai vadai with coconut chutney.
