Soft Crispy Adhirasam - Traditional Diwali Adhirasam Sweet Recipe - Adhirasam in Grandmother's Method

Adhirasam is a tasty traditional south Indian sweet which is made during the time of Diwali. This is made in almost all the houses where they celebrate the Diwali Nombu. Here I have given you a easy method of doing adhirasam. Two important things for getting the taste of the adhirasam is best quality jaggery and getting the correct paagu consistency. Try this adhirasam for this Diwali and enjoy.




Ingredients for making Diwali special Adirasam 

Raw rice- 1 kg
Jaggery- 3/4 kg
Cardamom powder- 1 tsp
khus khus- 3 tsp
Dry ginger(sukku)- 1/2 tsp powdered
Oil for deep frying

Method for making Diwali special Adirasam

1. Wash and clean the rice and then Soak the raw rice in water for 2 hours.

2. Drain the water after 2 hours and dry this by spreading in a cloth. When it gets dried grind this either
in a mixie or in a mill.

3. Take a thick bottomed vessel and add 1/4 cup of water, then add the jaggery and wait till it melts. Then filter the melted jaggery in a strainer to remove the dirt.

4. Keep this in flame and stir till you get a thick consistency. Then pour a drop of the paagu in a cup of
water. The correct consistency is that you should be able to syrup should not melt in water and when touched by finger it should roll this into a soft ball.

5. Switch off the flame and then add cardomom powder, dry ginger powder and then the rice flour. Mix well to get a soft dough just like chappathi. Stir well so that there are no lumps.

6. Heat oil in a pan, take a small ball of the dough and spread it on a greased banana leaf or a plastic sheet just like a poori.

7. Deep fry in hot oil until golden brown on both sides and then press this between 2 plates or in a adhirasam kattai

Now tasty delicious traditional adhirasam is ready.
