Kodo Millet Sambar Rice | Varagu Sambar Sadam | Diabetic Recipes

Kodo Millet Sambhar Sadam  is a healthy and delicious One Pot Variety rice made using millets, dals and spices. Here I have used Kodo millet you can substitute with any millet of your choice. Try to substitute millets instead of rice because millets are gluten free and are packed with essential nutrients and is rich in fibre.

Ingredients for making Kodo Millet Sambar Sadam

Toor Dal - 1/2 cup
Kodo millet / Varagu arisi  - 1/2  cup
Sambar Powder - 2 tbsp.
Salt - to taste
Mixed vegetables of your choice - 2 cups
Turmeric Powder - 1/2 tbsp.
Onions - 1
Tomatoes - 1 large
Oil  - 2 tsp
Ghee - 2tsp
Mustard Seeds - 1 tsp.
A sprig of Curry leaves
broken red chillies - 2

Method for making Kodo Millet Sambar Saadam


1. Wash the Varagu arisi in water 2 to 3 times to remove the impurities. Drain and soak in water for 1 to 2 hours.  Soak the Toor Dal in water for 1 hour.

2. Chop the vegetables into cubes they should not be too large or small. You can use potatoes, pumpkin, carrots, beans, drumstick, etc.

3. In a 2-litre pressure pan, add the Soaked Dal and washed kodo millet with turmeric powder and salt. Add about 3  cups of water and pressure cook for 3 - 4 whistles.

5. Heat oil and ghee in a Kadai, splutter the mustard seeds and add the curry leaves and broken red chillies.

6. Add onions fry till transparant and then add tomatoes, chopped vegetables and saute well. Next add the sambar powder and required amount of salt. Add water and cook till vegetables are done. Next add the tamarind water and allow to boil.

7. Open the pressure cooker and add the above contents and mix well. Allow this to  cook in a low flame for 5 minutes till everything gets blended well.

8. Add fried cashews and garnish with coriander leaves.

Millet Sambar rice is ready to be packed for lunch with papad and potato chips. You can also serve with any Poriyal or varuval.
