Madurai Tri Colour Poriyal Recipe | Carrot Cabbage Beans Poriyal | Mixed Veg National Poriyal



Madurai Tri colour Poriyal Recipe is a combination of cabbage, beans and carrot which gives a pleasing and colourful look. Here I have used equal proportions of cabbage, beans and carrot. This tricolour healthy poriyal is served in Tamil Nadu and is favorite for the kids. My Grandma makes this Poriyal on Independence Day and thus we call it as National Poriyal.

 Ingredients for making Madurai Tri colour Poriyal Recipe 

Beans - 1 cup (finely chopped)
Carrot - 1 cup (finely chopped)
Cabbage - 1 cup (finely chopped)
Moong dal - 2 tbsp.
Onion - 1 
Green chillies - 2 nos. (slit lengthwise)
Red chilli - 1
Mustard seeds - 1tsp.
Split urad dal - 2 tsp.
A pinch of turmeric powder.
A sprig of curry leaves

To Grind
Cumin seeds - 1 tsp.
Grated coconut - 2 tbsp.
Green Chillies - 2 nos.
Garlic - 3 nos.


Method for making Madurai Tri colour Poriyal Recipe 

1. Take equal proportions of finely chopped beans, carrot and cabbage. Grind the ingredients given under "To grind" to a coarse mixture in a mixie.

2. Heat oil in a kadai add the mustard seeds and allow it to splutter next add the red chillies and split urad dal when the dal turns brown add the curry leaves.

3. Next add the finely chopped onions and saute till they become transparent.



4. Now add the chopped vegetables and mix well.

5. Add salt and turmeric powder and moong dal and saute well for 2 minutes and then add 1/2 cup of water and close it with a lid and cook in a medium flame.

6. It will take just 3 to 5 minutes for it to be cooked. Avoid overcooking to retain the colour.

7. After it is cooked add the ground coconut mixture and stir well.


Now the yummy healthy Carrot Cabbage Beans Poriyal is ready for lunch.

Serve this with SambarKaara Kuzhambu or Rasam.
