Cluster Beans Fry


Ingredients for making Kothavarangai poriyal

Cluster beans/kothavarangai (chopped) – 100 gms

Onions - 1 no.

Turmeric powder – 1/4 tsp

Red chillies - 2 nos.

Groundnut - 2 tbsp.

Garlic - 5 nos.

Salt – as required

To season

Oil – 3 tsp

Mustard seeds/kadugu – 1/2 tsp

Broken urad dal - 1/2 tsp.

A sprig of Curry leaves

Method for making Cluster Beans Stir Fry

1. Remove the head and tail of cluster beans. Cut them into small pieces. Boil cluster beans in water until they are soft and cooked.

2. Heat oil in a pan. Let the mustard seeds splutter, add urad dal and fry till it becomes brown and then add curry leaves. Now add the chopped onions and fry till it becomes transparent. Next add the cooked cluster beans, turmeric powder, and salt. Stir well and cook for a minute.

3. Grind the red chillies, peanuts and garlic in a mixer to a coarse powder.

4. Add the ground peanut powder to the cooked cluster beans and stir well. Cook for a minute.
Lastly, simmer the flame and give a quick stir, cook for a minute, and then switch off.
